A Healthy Hashbrown Casserole

I made this amazing Vegan Hashbrown Casserole from the eatplant-based.com blog and loved it. It is not only vegan, it's oil-free and made with whole foods!

The cheese sauce calls for a dash of cayenne, but we like spicy food so I really gave my batch an extra dose for some extra kick.

Tailgate Breakfast with No-Mayo Apple Salad

Healthy is not normally a word I would associate with TAILGATING, but after recently changing my relationship with food, I've been on a mission. Most blogs and tailgate food recipes are loaded with cheese, oil and fattening ingredients.

After working a few short months with an amazing nutritionist/health coach (shout-out to Lisa!), I've learned to focus on whole food plant-based meals and snacks, And it IS NOT HARD OR BORING! 

Trust me. I've lost weight steadily over 2 months, and I don't miss my cheese and cracker binges at all. 

I thought my biggest challenge would be tailgate menus during Football season, and while it remains to be seen how my beloved Dawgs and my new food relationship net out, we're both off to a great start. This No-Mayo Apple Salad scored big - healthy, easy to make and delicious!
